Guacamole

I love entertaining guest, that is one of the reasons I wanted a KitchenAid Mixer.  We had family over this weekend and grilled carne asada for dinner.  I made this guacamole to top it.  I love how my guacamole turns out in my mixer!!  

Guacamole


What you need:

3 Avocados
2 Tomatoes
1 Fresh Jalapeno
1 Large Lime
1/2 Large Onion (I used white this time but usually use purple)
Cilantro to taste
Salt to taste
Pepper to taste
Garlic Powder to taste


1.  Cut the avocados in half and remove the seed.  Empty the insides of the avocados into your bowl.

2.  Dice the tomatoes and put them in the bowl.

3.  Cut the jalapeno in half and remove the seeds and membrane.  Dice the jalapeno halves and put them in the bowl.

4.  Remove the outside of half of the onion; dice the onion and place it in the bowl.

5.  Cut the lime in half and squeeze as much of the juice into the bowl as possible.

6.  Cut the cilantro and throw it in the bowl

7.  Sprinkle some garlic, salt, and pepper in the bowl.

8.  Turn your mixer on and let it do it's thing!  Make sure to taste your guacamole and if you want to add more of anything go for it!

Shredded Cheese


I got a new attachment for my KitchenAid Mixer!  I got the slicer and shredder, you are able thinly slice, coarsely slice, finely shred and coarsely shred!

I started with a pound of cheddar cheese and of course put my attachment on my mixer.  It's so simple to shred your cheese with this attachment...


You'll want to cut your block of cheese in half so it fits in the top nicely.

Now turn on your mixer and what it do it's magic!

Next you'll want to store the shredded cheese in an airtight container or plastic bag and make sure to label the bag.

Homemade Ketchup

This is the first time I have EVER made homemade ketchup and I have to say I like it!  This was a little sweet but so close to the real thing!

Homemade Ketchup

What you need:

6 oz Can Tomato Paste
1/4 cup Honey (or Agave), this was a bit too much honey for us
1/2 cup Apple Cider Vinegar
1/4 cup Water
1 tsp Sugar
3/4 tsp Salt
1/4 tsp Onion Powder
1/8 tsp Garlic Powder


Mix everything together in your KitchenAid Mixer. 

 Now store your ketchup in an air tight container for up to a month in the refrigerator.
